He's got over 25 years in hospitality, a background running an Italian restaurant on the Gold Coast, a thriving café, and a philosophy I genuinely respect: bring restaurant-quality dining to the water without overcomplicating it. When I sat down with Craig, it was clear he understood what catering on a boat actually requires. It's not the same as a restaurant or a function room. The timing has to work with the charter, the food has to travel and hold well, and the service has to feel relaxed rather than formal. His team gets that.

From now on, when you book a charter with us, you have two proper catering options available. The first is a chef on board. Craig's team comes with you for the cruise, prepares and plates multi-course meals in the galley, and serves your group throughout the day. It's a full restaurant experience on the water. Best for milestone birthdays, corporate events, or any group that wants to mark the occasion properly. The second is pre-ordered platters. Beautifully prepared grazing boards and platters, delivered to Marina Mirage before you depart. Everything is ready when you board. No cooking, no stress. Just great food to graze on whenever the group feels like it. This is the one most birthday and hens groups will love. And BYO is still absolutely welcome. Nothing changes there.

Why I'm genuinely excited about this

Catering has always been the part of the planning where I had to send people elsewhere without much guidance. Now I can point them to something I know is good, and that I know works on the water. Craig's food is the right fit for what we do. It's not pretentious. It's high quality, genuine, and put together by someone who actually cares about the experience.
